A Culinary Crossroads in Upcountry Waimea

When you find yourself navigating the rolling hills of Waimea, the savory scent of kiawe-smoked meats serves as a natural compass. The Fish and The Hog bridges the gap between the island's ranching heritage and its bountiful Pacific waters. It is the kind of place where dust-covered cowboy boots feel just as welcome as hiking gear, offering a rustic, no-frills setting that captures the true essence of Hawaii's Big Island interior.

Smoked Specialties and Island Freshness

The kitchen leans hard into traditional low-and-slow techniques. The brisket is the undisputed heavy hitter here, boasting a dark, peppery bark that gives way to tender, marbled perfection. If you prefer the catch of the day, their pan-seared fish plates are consistently fresh, often featuring local favorites like Ono or Mahimahi. The sides—specifically the house-made slaw and mac salad—provide the necessary crunch and creaminess to balance the richness of the proteins.

The Local Pace

There is a specific rhythm to dining in this part of town. The dining area stays bustling, and while the service is friendly, you should prepare for a relaxed, island-time pace. It isn't uncommon to hear the local radio playing softly above the hum of conversation or to find yourself waiting a few extra minutes for a table during the lunch rush. It is a shared, communal energy that makes the experience feel authentic rather than polished. Whether you are refueling after a trip to the summit or just passing through the Paniolo heartland, this spot hits that specific craving for hearty, unpretentious food done right.

We got there early (5:30pm) and was able to try everything we wanted. Inside was comfortable with plenty of room at the table. Stand outs were definitely the ribs, brisket, and cornbread. When we left, we saw them add brisket to the "running low" board and audibly heard everyone waiting sigh out in distress - so you know it's THAT good!

We are here twice during our visit to Waimea. The hamburger with pastrami, combination bbq platter with ribs & chicken and the pork nachos were really good. Great service! We arrived and put our bar and number on the list. Soon after we received a text that our table is ready.

My party of two arrived at 11:30 on a Saturday and there was a small line under the porch. The hostess could not have been more nice or accommodating, she was so friendly and gracious. Our wait was about 20 mins. We took first available seating and were sat at the bar. Again, great and friendly service. The female bartender was so pleasant and answered any questions and described the menu and sauces. The portions were huge with ample food.

Great place to eat. Fun vibrant atmosphere with a very nice outdoor garden area. Small but beautiful. Friendly attentive staff and delicious food. We order the brisket platter broccoli soup, Mac m cheese and nuggets for the kids. Oh and a piece of Chocolate cake for the road. It was a massive piece of cake. The home made dill ranch is amazingly good. We got a side of it to take home. The brisket had good flavor but was a bit dry. Over all we will be visiting again before we leave Big Island and hopefully a juicer brisket awaits!!!

One of our most memorable meals on the Big Island. Everything was phenomenal from start to finish. We had the pulled pork platter with sweet potato fries and pineapple, the fresh catch taco salad as an appetizer, a gumbo, and the chicken and ribs platter with sweet potato fries and beans. Every dish was packed with flavor and clearly made with care. The vibe is a cool Western-style BBQ feel, and the staff was incredibly friendly and welcoming, which made the experience even better. Highly recommend getting there early when they open — they sell out of items quickly (we missed out on cake because it went fast). Definitely a must-stop spot on the big island!
