Taco Rosa
About
A Waimea Staple for Coastal Mexican Comfort
Taco Rosa brings a burst of seasoned flavor to the rolling hills of Waimea. Far from the typical fast-casual experience, this spot serves as a casual sanctuary for locals looking to trade the mountain mist for something spicy and satisfying. When you walk in, the air is thick with the scent of searing carnitas and fresh cilantro, setting the stage for a no-fuss meal.
The Flavor Profile
The kitchen leans into the classics with a commitment to straightforward preparation. Their signature tacos are the main draw, featuring hand-pressed tortillas that offer just the right amount of chew. If you are aiming for a full plate, the burritos are notoriously hefty—packed tight with rice, beans, and your choice of protein, often requiring two hands to manage. The house-made salsas vary in heat, so keep a cold beverage close if you go for the verde.
Setting the Scene
This is a place built for function over flare. You will find a straightforward, open layout that works well for families needing a quick bite or solo diners looking to lean over a plate of chips. A minor heads-up for those visiting during peak lunch hours: parking can get a bit competitive as the surrounding shops fill up, so keep an eye out for a spot near the main thoroughfare. It is the kind of neighborhood joint where the staff knows the regulars by name and the playlist is always dialed to a relaxed tempo, making it a reliable stop for anyone navigating the North Hawaii landscape.

Taco Rosa is a solid choice for a quick, casual bite. The menu is simple, just tacos and pizza, so don't expect a huge variety. Everything is served in to-go boxes, making it easy to grab and head out. Fast, simple, and good if you're in a hurry.

Forget about the butter chicken or any of the fusion fillings from years ago. Taco Rosa has removed all the good stuff from the menu over the past year. What's left is over-priced average Mexican and thin crust pizza. The burritos are better than the tacos. The keiki quesadilla looked like crispy hash browns. You order at the counter and they don't provide water except by purchasing bottles. I miss the former glory of the old Taco Rosa. Pau Pizza shares the space and seems to be the main focus now.

There’s nothing quite like a good taco after a bike ride, beach day, or when ya need a post gym refuel. This is always my go-to for all those occasions. And it’s one of the few spots that stays open late. I can’t remember the special that was around for a bit, but the spicy crema thing you guys were doing was next level. Make it standard!

This is a fantastic taco place! We tried the chicken, local sweet potato, and braised beef. They were all delicious! Highly recommend the place!

The ingredients were fresh, which we appreciated, but overall, the burritos felt a bit overpriced for what we received. Ours were served room temperature and a bit on the dry side. The atmosphere is great though!

I recommend the pork taco, it's delicious but I don't recommend the chicken, it's bland and has no flavor. But the beans and rice are tasty. The salad is fresh.

Holy mother of all tacos. I am mind blown on how delicious the tacos are. I had the opportunity to try their special taco which was Indian butter chicken and the taste was spot on. The fusion of the Mexican and Indian flavors blended perfectly together! The other verities of chicken and vegetarian options were just as delicious. Definitely recommend everyone coming here to try it out. BEST PLACE ON THE ISLAND!

What a great find! Excellent vegetarian tacos. The grab-n-go food looked really good. Nice little area in back to sit. Shares a parking lot with Merriman's. Definitely worth a stop.

I dream of tacos because of this place. Oh Taco Rosa's the fresh, handmade tortillas! Their special of the day, Carne Asada was magical. I usually eat 3 tacos and call it quits. But Taco Rosa got me up to 5 tacos! So wonderful and delicious. They have have the 4 F's, freshness, fast and friendly service, fair price. They serve drinks too if you're craving margarita in a can (really good) champagne or a jarritos. Going back for more!

Best damn tacos ever and I live in San Francisco known for its mission Mexican food. This tops that. No words for the tacos. Just try it and see. Amazing combination of flavors and the salsas have such full flavor with a back end heat that is perfect. They also make KID QUESADILLAS! With cheese melted on the outside, too!
