A Slice of Tokyo in the Heart of the Big Island

Stepping into Shiono Waikoloa feels like finding a quiet, dedicated corner of Japan tucked away from the sprawling resorts of the Kohala Coast. The atmosphere is minimalist and unpretentious, prioritizing the quiet precision of the sushi bar over flashy decor. It serves as an ideal escape for locals and visitors alike who prefer a focused, high-quality meal over the typical island tourist fare.

The Art of the Omakase and Daily Catch

Chef Shiono brings a master’s touch to the island, centering the menu on the day's freshest arrivals. You will find that the nigiri here showcases pristine cuts of fish—often featuring hamachi, bluefin tuna, or sweet amaebi—served at the ideal temperature to let the flavor of the catch lead. Beyond the sushi, the izakaya-style small plates are a standout; the agedashi tofu arrives with a perfectly crisp exterior that yields to a silky center, bathed in a dashi broth that balances subtle salt and umami.

Dining Nuances in Waikoloa Village

The space is intentionally intimate, which makes it a fantastic spot for a quiet date night or a solo dinner at the counter where you can watch the kitchen’s methodical pace. Be mindful that the limited seating can fill up fast during peak dinner hours, so arriving early is a local pro-tip. While the interior is calm, the soundscape is dominated by the gentle clinking of porcelain and the steady hum of conversation, creating an immersive experience that feels distinctly authentic. If you are exploring the Waikoloa Village area and craving traditional Japanese techniques that respect the ingredient above all else, this is the destination.

Customer service was horrible. The man working at the counter was very rude. I stood there for five minutes and was not acknowledged until one of his coworkers told him to help. I ordered a cucumber roll that was on the menu and he said no… then why is it on the menu and I was able to order it the day prior? Apparently “you can only purchase what is premade.” So if you try ordering off the menu they won’t make it for you.

Not the best sushi of course, but a good alternative compared to other expensive restaurants in that area for a quick and easy lunch. Tried the spam for the first time and it was good! Spicy sushi rolls also recommend!

Great way to eat on or near the resort grounds! A bit short on the veggies if you ask me, but you can't beat how easy it was.

This place is inside the grocery store, people saying it isn't there, just don't pay attention. The sushi is very good, as are the bento boxes and poke bowls. Price is right!

This place has really detetiorated over the past 4 months. I eat there regularly, and it’s really gone downhill. Seems that it’s drifted away from being a pretty authentic Japanese bento into something that is now very loose and sloppy. Portions now vary day to day, arrangements look wrong, and it no longer has that Japanese attention to detail that it used to have. What happened to the quality control they used to have? Now, it feels more like mainland “fake” sushi places that bear little resemblance to authenticity. I rated this a 4-5 last year, but now, it’s a 2.
