About
A Slice of Hilo Tradition
If you find yourself wandering near the historic bayfront of Hilo, you will likely catch the scent of seasoned kalbi and smoky meats drifting through the air. George's Meat Market isn't your average butcher shop; it is a local institution that has been supplying the community with high-quality cuts for decades. Locals know this spot as the place to grab pre-marinated meats ready for the grill, making it a weekend essential for beach cookouts along the Hamakua Coast.
Authentic Island Butcher Shop
The display cases are filled with local favorites, from thick-cut pork chops to their legendary marinated steak strips. The atmosphere is bustling and unpretentious, defined by the sound of heavy cleavers hitting wooden blocks and the friendly chatter of regulars debating the best way to smoke a brisket. It is a no-frills, utilitarian space where the focus is entirely on the quality of the protein.
Practical Tips for Your Visit
Be aware that the parking lot can get congested during peak hours, especially on Friday afternoons when the Hilo crowd is stocking up for the weekend. The shop keeps things efficient—take a number if it is busy and keep your eyes peeled for their rotating selection of house-made sausages. Whether you are looking for specific cuts for a traditional luau or just need something quick and flavorful to throw over a fire, this market is the heartbeat of Big Island home cooking. It’s the kind of place where the butchers remember your name and your preferred thickness for a ribeye.

If it wasn't for the picture of the outside of the building I would have thought I was in the wrong place. Other reviews and pictures show fresh meat. We walked in and it was an unorganized set of large freezers with frozen meat. No ham and nothing was labeled with names or prices. We were all shocked that it had so many good reviews. We didn't buy any meat other than a bag of jerky from outside.

Sadly the picture of 41 Hoku St. that accompanies the Google Map find is not appealing. It looks a little derelict. The actual address for Georges Meat Market is 28 Hoku St. off Kilauea Ave. Although the other picture shows cuts of meat, they currently are not running a retail meat market. BUT... They are making probably the best beef jerky in the world. If you are looking for traditionally processed beef jerky, this is the place to find it. Like LOVES Robertson's Jerky that they sell at their truck stops on the Mainland, it is a dry cure not processed meat. Unlike Robertson's, Georges is thin cut. It literally dissolves in your mouth with a pleasant crunch. They have many cures. Sriracha, Black Pepper, Chili, and Shoyu. All are great. I ate one of their larger bags on the way from Hilo to Kona. I was a little thirsty when I got to Kona. But satisfied. Didn't have time to look at the scenery instead it was finding the bag. Gourmet jerky does come at a price but worth it. Their other lines of traditional Hawaiian sweets are also worth it. Stacy can tell you about all the treats they sell. Worth the drive from Kona if you want omiyage for your Mainland friends.

Whenever I need a Last minute meal whether for family or guests, I go to George’s for high quality meat. Special occasions mean it’s prime rib time. Can’t beat their already seasoned roast. Everyone loves their beef jerky for omiyage. Nothing comes close to it.

We searched for days for good seafood to cook while we were visiting this island. We found this place and raced there to try and make it before the doors closed. Luckily we did and what incredible service we received! The lady working was one of the nicest people we met yet and she had an incredible selection that filled all of our cravings! Really happy we checked out this little gem of a shop and would definetly recommend for their customer service and reasonable prices!

BEST BEEF JERKY EVER! The beef jerky is thin, crispy and made fresh every day. Whenever I’m in Hilo I have to pick up beef jerky and candies for the entire family.
