Morimoto Maui
About
A Coastal Fusion of Iron Chef Vision
Perched right where the Pacific meets the Wailea coastline, Morimoto Maui brings Iron Chef Masaharu Morimoto’s signature precision to the islands. The dining room is expansive and airy, designed to frame the shifting colors of the sunset rather than distract from them. You’ll find the sound of crashing surf serves as the primary soundtrack, punctuated by the rhythmic clatter of high-end service.
Signature Flavors from the Pacific Rim
The menu highlights the intersection of Japanese craft and Hawaiian ingredients. The tuna pizza, a staple that has followed the chef across his global outposts, remains a standout here—the paper-thin, crispy crust serves as a canvas for slivers of raw tuna, jalapeño, and a delicate drizzle of anchovy aioli. For those seeking something heavier, the braised black cod arrives with a ginger-soy reduction that balances deep umami with a subtle, bright heat. The sushi bar is the undeniable heartbeat of the room, where you can watch the chefs work with surgical focus on Hamachi and local catch.
Practical Notes for Your Visit
While the open-air design is breathtaking, be prepared for the tropical humidity—the breeze flows freely through the dining area, which means you might want to bring a light layer if you’re sensitive to the evening chill. Valet parking at the resort can be a bit of a maze during peak sunset hours, so arriving fifteen minutes early allows you to bypass the bottleneck and secure a spot before the restaurant fully hums to life. Whether you are settling in for an anniversary dinner or just looking to experience high-concept sashimi after a day on the beach, the atmosphere strikes a balance between sophisticated polish and the laid-back energy of the South Maui coast.

Anthony did a fabulous job. We had the omakase dinner with wine pairings. Highly recommend for a splurge dinner!

The food at Morimoto is delicious. The Wagyu was melt in your mouth perfection, and the King Salmon sashimi was incredibly fresh and delicious. To top it off, the strawberry sorbet is a must have. However, be prepared for a very high noise level; it was quite loud, making it difficult to hear our server or even carry on a conversation at our own table. Also, keep in mind that parking is strictly valet, so definitely bring cash for tips. Note: Dress smart-casual.

This is for the foodies :) Our dinner was absolutely delightful! We shared a handful of dishes : The Cod - delicate, sweet, cooked to perfection Chef’s sashimi platter - absolutely gorgeous ( oh gosh! The scallops, otoro, and the salmon - divine! ) Hāmākua mushrooms - hella good Blistered shishito peppers - of course! Wagyu Filet - Rare - Chefs kiss Ishi yaki buri bop - yummmyy!! Mussels on special - so good! Rock n Spicy tuna - that’s literally a 2 in 1 deal & #sakeflights & forced ourselves to get dessert for the hell of it! The desserts are perfect - not too sweet, but just right! The sunset / ocean / luau view was gorgeous. You do have to walk down “a handful of stairs” - but it’s worth it!

Morimoto is a must-visit, especially when staying at the Andaz or nearby. Since we weren't looking for a heavy dinner, we were delighted to discover their excellent, more casual lunch option: the Pre-Set Wagyu Tasting Menu for $115 per person. This was an ideal choice for a high-scale lunch, steps from the beach, following our outrigger experience. We particularly enjoyed it because of the bar area, with high-top tables that offer fantastic ocean views, over poolside seating, or the indoor seating. The tasting menu was superb. It featured Wagyu Beef Carpaccio presented as nigiri, alongside the cucumber Maki (a filler, not much more), and then the main courses. We preferred the Wagyu Filet over the Bop, though the Bop is reportedly more popular. We simply prefer our wagyu less "dressed." We loved it so much we returned the next day for lunch, focusing on their spectacular fresh sushi options, including various types of Toro, Uni, Mackerel, Red Snapper (fantastic), and yellowtail. Everything was excellent. A special thanks to the barman, Anthony, who was incredibly accommodating and nice.

A bit disappointed in this place. Big fan of Chef Morimoto. The food was awesome as expected. The service not so much. Server was not attentive and a simple ask to serve a beverage with my meal did not happen. Nearly half way through my meal I stopped eating to await my beverage. When the server finally showed up I noticed that they had a couple drinks waiting for them at the bar. The facility needs some TLC, I get ocean front is a tough environment but that means you need to work harder. I live ocean front and know the work. Bathroom detail needs work too. For unisex bathrooms the seat should stay up or you get what's going on when dudes use it.

I will be dreaming about the sticky ribs for a while after this. Food and drinks were amazing, everything was cooked to perfection, presentation was on point and the flavors were very unique and delicious. Mikey, our server was awesome, made great food recommendations.

Ashley was so delightful and helpful with ordering our special lunch at Morimoto. The sushi was definitely the best I've experienced and the wagyu sashimi was out of this world. Definitely will be back.
