This was easily the highlight of our current trip to Maui. I found nyloS on a whim while looking for a special option for my girlfriend's birthday dinner. They were incredibly accommodating, with great interactions with all the guests. We had several enjoyable conversations with both Chef Jeremy and Pauline, getting background and insights into what they do. The food and wine pairings were thoughtful, and well presented. The plates were exquisitely presented and so amazingly tasty. Each bite brought us deeper into the mind of Chef Jeremy. I highly recommend this as a must-experience destination if you come to Maui. Other restaurants can be great, but this was a one-of-a-kind dining adventure.

We arrived few minutes early for our reservation waited outside to have the door unlocked proply. We were approached by two homeless people asking for money while waiting. I much rather have been seated and waiting, The food was creative, interesting good, not great or scrumptious. We expected more, but not more time which took , 3 1/2 hours. self-absorbed explanations and expectations for the whole evening. We opt for the extra extraordinary wine price which was a disappointment. I must mention that the glass of wines were third full, extra $175 wine tasting for each person. An additional fee which we didn't see coming. If the wine was exceptional, young wines. The dessert was a mini dry cream puff, lolly pop, a gummy candy. I don't usually leave a bad review. Cost us over $1,000 for two. Plus I was asked if I would like extra caviar added to the appetizer. I replied. Sure not knowing it was an extra $40 for a very tiny spoon greed. We've had better wine tasting at less than half the amount with better scrumptious delicious food options. .

nyloS was impeccable. We loved the menu and the fun aspect of a few of the dishes. It’s now one of our top 5 restaurants. Such an amazing way to celebrate our anniversary! We felt very welcomed and the food was superb!

NyloS is a top notch, almost private dining experience. Chef brings excellence and passion to every plate. And his lovely wife expertly pairs the wine. The service is so attentive and thoughtful. Will definitely return.

We are foodies who love experiencing the very best restaurants around the world, and Nylos ranks near the top of an incredible culinary adventure. From the moment we arrived, it was clear that this was not just dinner — it was a truly special experience. Chef Jeremy and his wife Paulina create something rare: a warm, intimate, deeply personal dining experience where every detail matters. The two of them run the entire evening together, and you can feel the heart and soul they pour into every course. The nine-course tasting menu was extraordinary. Each dish was artistically crafted, beautifully presented, and layered with flavors that constantly surprised and delighted us. Jeremy’s culinary mastery, paired with thoughtful wine pairings, took our palates on an unforgettable journey. Meanwhile, Paulina’s gracious hospitality and flawless execution created an atmosphere that felt both elegant and welcoming. Every course felt like a story — creative, balanced, and memorable. The personal touches throughout the evening made the experience even more special. Nylos truly feels like a hidden gem in Paia. Between the food, the wine, and the incredible hospitality, this was one of the most unique and memorable dining experiences we’ve ever had. Intimate environment, immaculate food. Decedent across the menu. From lobster and caviar to Wagyu and foie gras; and everything is prepared to perfection and has a purpose. The plating is gorgeous and the gastronomy effects were beautiful and interesting. Not only was the food top notch, the service was excellent as well. We learned a lot about the sugar industry of Hawaii and about the ingredients used in our dishes. We will definitely plan a return trip on the our next visit to Maui.

Jeremy and Paulina, the owners of Nylos, are true Maui gems. They’ve created a dining experience that’s both intimate and unforgettable—only 14 seats, yet every detail feels intentional and refined. Their commitment to classical cooking techniques shines through in every dish, showcasing the best Maui has to offer with a level of precision and creativity that’s unmatched. The food and wine pairings are exceptional, thoughtfully curated to elevate each course into something truly memorable. The ambiance is warm, inviting, and perfectly complements the artistry coming out of the kitchen. I’ve dined here at least a dozen times, and every visit still manages to surprise me with a dish that knocks it out of the park. Nylos isn’t just a restaurant—it’s an experience, and a true must-visit for anyone looking to enjoy elevated dining on Maui.

This could be the best meal that I have ever eaten. We were fortunate that a large group cancelled, and had the place to ourselves. The food was very tasty and presented amazing. The dishes and wine pairing were well thought through. The service was perfect. They were not hovering, but attentive to what was needed at every moment. This wife and husband team have transported this small place in Paia Maui to what could be a fine dining restaurant in Europe. The pricing is appropriate for the amazing dinner and experience, but unfortunately it will not allow most people to afford it, but I wouldn't change a thing. Mahalo for the dinner of a lifetime!

This is a special place. It's expensive. $300/person. Wine pairing is another $120-160. It's long. 3+ hours. But it is WORTH IT. This is a small restaurant run by a husband and wife couple who've lived on the island for decades. The care they put into every aspect of the experience shows. The husband is the chef. Personally cooking everything himself. He changes the menu NIGHTLY. The ingredients are premium and mostly come from local farmers. Everything is high quality and cooked to perfection. These are not simple dishes either. Each course includes many different elements that each took time and care to prepare. The wife runs the front of house and she couldn't be more wonderful. She remembered us well even though we only dined there once a year ago. You really feel like you're in their home being cooked a gourmet meal by a family that really cares. And that's what this is. No big hotel. No ocean view. No corporate chain. Just a small family restaurant cooking amazing food. If you have the budget and the time, you MUST try this restaurant. It's a truly unforgettable experience that will be a highlight of any trip to Maui. We should all work together to support local businesses like this whenever we can.

My wife and I celebrated our 40th wedding anniversary at nyloS. It was an amazing culinary experience. We had never done a chef’s tasting before. We were not disappointed. All of the food was excellent. Jeremy and Paulina make you feel welcomed with a very friendly yet professional food service. We would not hesitate returning to nyloS on a future visit to Maui and highly recommend.
