A Smoky Haven on the Road to Hana

When you find yourself navigating the winding roads of Haiku, the air starts to change. It shifts from salty ocean mist to the rich, heavy scent of kiawe wood smoke. Ka Haku's Smoke Shack sits as a roadside beacon for locals and travelers alike, serving up authentic Hawaiian barbecue that captures the soul of the island’s North Shore.

The Pitmaster’s Craft

This isn't your polished, white-tablecloth establishment. Expect a casual, open-air setup where the focus is entirely on the slow-cooked proteins. The ribs are the undisputed champions here, falling off the bone with a perfect bark developed over hours of patient heat. The flavor profile leans into a traditional island style—savory, slightly sweet, and unmistakably smoky. You will hear the sound of island music drifting from the kitchen and the occasional rustle of palm fronds as you wait for your tray.

Know Before You Go

The shack thrives on a 'when it's gone, it's gone' philosophy, making it a true Haiku local secret. Be prepared for a modest, rustic environment where you’ll likely be eating at picnic tables under the shade. Parking can be a bit of a scramble during the peak lunch rush, so aim to arrive early to ensure you get your pick of the daily specials. It is the ideal stop for those craving a rugged, no-frills meal that fuels the rest of your Maui adventure without the pretension found in resort dining hubs.

When we drove up onto this place we were starving! The service was nice and friendly. The only option we had was chicken, 2 plates - $60. Only drink option was fresh coconut (warm) I think it would’ve been better chilled in some way I guess. We did get half a pineapple too which was delicious 😋. It’s no 5⭐️ restaurant but it’s very good if you have been on trails all morning. The trolley carts were a fun place to dine. Bamboo chop sticks do take a little getting use to but we managed! 🤗

$30 for a platter that will feed two people. There is not a single inorganic item used the plate is banana the chopsticks or bamboo. And I watched them pick the salad up the hill from The shack shack. Everything tasted great!

Stumbled upon this place on the road to Hana. It smelled awesome so we had to stop. The mixed BBQ plate was awesome. It had pork, chicken, rice and a fern salad. It was all so delicious. The guy working the grill was super friendly and cool. The seating is in old tram cars. The "plates" are big chunks of bamboo. The utensils are hand cut bamboo chopsticks. I can't say enough about how incredible this place was. It is a must stop on your road to Hana.

Such a cool stop, super low key, cash only, just a couple of guys firing up some food. Super friendly, talked about the different foods they have depending on the day. Cool to see them cook and prepare everything right here on the side of the hill. From the chop stick to the plates to the food and drink they prep it all right here in front of you. Daughter loved sitting in the "train" to eat and everyone really enjoyed the food. Was really great to have a proper quiet spot to hang out and talk to the people running their business. I would certainly come here again.

A smoke shack indeed… the single cook uses everything from Mother Nature to make and prepare the meal. Only option we were able to order was the combo (pork + chicken). We then we’re told to sit at the tables, which is what looked like abandoned trolley cart. He think brought our food out to us in tree husks with two cut up bamboo sticks to use as chopsticks. Very innovative I must say. And for a smoke house in the middle of the jungle on the side of a narrow road (Road to Hana) this place indeed hit the spot for the meat eaters. Unfortunately, this place is definitely not vegetarian friendly—obviously. The meat was on a bed of spring mix, rice, and a few veggies. After we were finished the cook brought out a “leaf” plate of pineapple chunks, which was very refreshing on a hot day following a hot meal. Definitely an experience to try (for all you meat lovers)! I believe we paid $50 for two meals

What a unique experience on our adventure on the road to Hana. Midway to Hana you come up to this place and the food is delicious. Paid 30 for 1 plate but it feeds 2 people.my favorite was the chicken.

I gave 4 stars because my visit didn’t live up to the experience that others had. It appears a new owner has taken over. The setup didn’t have seating or drinks. The ribs were epic, very very good. The kids loved them and would have eaten a lot more. We were not able to get chicken because we had some so early. The sides were some canned corn heated, and over cooked white rice. With time and practice I believe this will be an exceptional stop, as it is it’s worth a stop for lunch.

Do not miss out on this place if you go on road to Hana! This is the best food you can get in the entirety of Maui imo. The chicken is super tender, super juicy, with crispy skin. The flavor is just fantastic. The same goes for the ribs: crispy on the outside while tender and juicy on the inside. The rice and corn go well with the meat as well. If you ask me, $20 is a steal for a plate like this. DO NOT MISS OUT ON THIS PLACE.

Best Pork we had on this Maui Trip! We got to Ka Haku right around 10:30am when they opened. We were the third party in line. The parking lot filled up quickly after us. The first party waited about 1.5 hrs while the second waited about 30mins. We were lucky and only waited 5mins. The owner of Ka Haku is very friendly. He explained the ingredients and his cooking style. We ordered the $20 BBQ platter and shared among 4 people since we had just had breakfast less than 2 hours ago. The platter would be perfect for a party of two. The food... Is awesome! I enjoy BBQ. On top of that I live in Texas and travel for work. So I've had my fair share of BBQ. Ka Haku is easily on my top 5 list. I would definitely make the drive the next time I'm in Maui. And definitely a must for anyone doing the Road to Hana drive!
