Upcountry’s Wood-Fired Ritual

Step off the main road in Makawao and you are met with the scent of burning kiawe wood and bubbling sourdough. Marlow has mastered the art of the 12-inch pie, serving blistered, leopard-spotted crusts that have become a staple for locals trekking through this historic paniolo town. The small, open kitchen commands the room, and watching the chefs slide pies into the searing heat of the oven provides a kinetic energy that balances the town's slow-paced, rustic charm.

The Marlow Approach

Founded by Jeff and Matilda Fisher, this spot focuses on a hyper-local approach to pizza. They utilize high-quality, often imported flours paired with seasonal toppings that highlight Maui's agricultural reach. Whether you opt for the classic margherita or their more experimental weekly rotations, the balance of chewy, airy crust and vibrant tomato sauce remains consistent. The menu is intentionally tight—they focus on doing one thing exceptionally well rather than cluttering the table with excess.

What to Expect in Makawao

The space feels like a neighborhood living room, but be prepared for the realities of popular Upcountry dining: the seating is intimate, and prime times bring a buzz of conversation that bounces off the reclaimed wood surfaces. It is loud in the best way possible, filled with the clatter of silverware and the hum of a community grabbing an early dinner. If you are visiting during the weekend, keep in mind that the small parking area fills quickly, so a little patience is part of the experience. It is the ideal stop for anyone craving a genuine, handcrafted meal after a morning spent exploring the cooler slopes of the island.

This place rocks! Totally is the best restaurant for great food. We love the meatballs, pizza and chopped salad. Gave the atmosphere a 4 because it gets a little noisy. Make reservations for dinner as the seating is limited.

AMAZING all around. The service, food and atmosphere at Marlow are impeccable. All the staff were checking on us to make sure we were enjoying ourselves and to see if we needed anything throughout our meal, not just our server. And all of them were so kind and helpful. Every single dish was perfect, no notes. We had the smashed potatoes, mortadella pizza, a special shrimp and lemon pasta and the olive oil cake with gelato. All the dishes were perfectly balanced and cooked to perfection. I wish I could eat here daily. The music was top notch (and not even that loud) - 90s house and hip hop? YES!

Some of the best pizza I've had. The sourdough based dough was light, airy, soft in the middle and crispy on the outside. The pizza is not heavy or greasy and very flavorful. The drive and view from just outside are incredible!

Marlow is a wonderful restaurant. The food is fantastic and the service matches the food. We had a lovely dinner here with their chopped salad, Calabrese pizza and a nice bucatini. Everything was fresh, well seasoned and the pizza crust here is honestly a standout for how good it is. The dessert was honestly a surprise as the cake is quite moist and the almond-poppyseed flavor was very tasty. I would get this again!

Little gem in upcountry. So cute inside. 9/10 all around. A must try for locals and out of towners. It's quality, upscale food. The flavors are incredible, not overly complex but really mesh well together. We had the meatballs to start (no questions), the pizza that was on special that day, and the pasta bolongnese, with a few cocktails. You really cant go wrong. I would say their pizza was hands down why I would keep going back (ee live on the west side). Generous portions to share and fill you. The unique flavors make it different than others. Good for a date night, big parties and even for families. Nice addition to Maui and to upcountry. Check it out and stay a while. Then head over to Lahaina Brewery next door afterwards.

I apologize for my leave of absence while we were crossing the Pacific. My yacht has both Starlink and fiber optic cable Internet, but my wife kept me busy playing shuffleboard and aperol and we did not have time to leave a review (my review of the Pacific in general is that it is fine but too salty). We decided to take a break from the yacht and reconnect with reality by going to Hawaii. We do appreciate that this island has yacht access, unlike some of the less hospitable restaurants in the United States mainland (includes Canada and soon to be Mexico). The drinks were almost as good as our Italian mixologist does, and the pasta was indeed Italian. My wife (Spanish, fancy) did not complain, which was a welcome reprieve from the past few months. My wife, after trying the entire menu, decided that the best dish was the Cacio E Pepe. Thank you, señor Pepe, multo bene! Our servestress, Michelle, was kind enough to let us know the name of the restaurant DJ, so we can contract them for future music related activities. We will be sure to send an envoy post haste for any pizza or pasta related desires.

TLDR: Mediocre pizza, modern/sterile interior, and poor service. The service alone would turn me away from ever coming back or recommending to a friend. Came here after seeing all the positive Google reviews about the pizza. Based on past reviews it sounds like this place used to be really great, but has declined after getting lots of new hires. I encourage you to look at the other lower star reviews before deciding to come here if service matters to you. Service - 1/10 - I agree with others comments that each interaction we had with any members of the staff gave that we were a major inconvenience just for existing in the restaurant. We are pretty polite people (say please and thank you, smile, etc.), but everyone there felt like they were giving fake smiles and disingenuous service. Service was also very slow, which on a weekday lunch I can understand most folks are there to take a slow afternoon- but it was unusually long to get our check/takeout box. Margherita pizza - 5/10 - Pizza is a very thin crust style and as others mentioned it is soggy in the middle, sauce is okay but nothing to write home about. Salad - 1/10 - Salad was basically lettuce coated in the thinnest layer of dressing that you could barely taste it. Didn’t seem like the lettuce was really seasoned at all. Chai Latte - 4/10 - Chai latte was spicy, which I usually prefer but this one has way too much black peppercorn (?) that it overpowered the drink. The bottom of the latte was way too spicy to drink.

Marlow is 🔥. Love the food, the funghi pizza, meatballs, OLIVE OIL GELATO. Their coffee and beans are super good too, I buy their Origin beans for at home. This is definitely the best restaurant upcountry.
