The Musubi Truck Kalapaki
About
A Taste of Kauai Roadside Classics
Parked near the sparkling shores of Kalapaki Beach in Lihue, this vibrant food truck serves up the ultimate grab-and-go fuel for beachgoers. Forget elaborate sit-down meals; here, the menu centers on the legendary musubi—that perfect blend of seasoned rice and grilled Spam wrapped in crisp nori that defines local island comfort food.
Island Flavors on the Move
The Musubi Truck is a go-to for surfers and visitors hitting the Lihue coast who need a quick, salty, and satisfying bite before heading back into the waves. The scent of sweet shoyu glaze hitting a hot griddle often drifts across the parking area, signaling that a fresh batch is ready. Whether you stick with the classic original or opt for one of their specialty flavor combinations, the portions are hearty enough to keep you energized for a snorkel session at the nearby bay.
Know Before You Roll Up
Operating out of a compact mobile kitchen, the service is fast, though you should keep an eye on the clock during the lunch rush when the line starts to stretch. The truck doesn't offer formal seating, so expect to enjoy your snacks tailgate-style or while walking the scenic paths overlooking the Kauai Marriott resort area. It’s a no-frills, authentic piece of the Lihue culinary scene that prioritizes flavor and convenience over fuss. If you’re looking for a genuine Hawaiian snack experience without the wait time of a traditional restaurant, this is your primary stop on the way to the water.

A lot of the items are very fried and they don’t really have too many others options. It was good but it was nothing special and didn’t really have much to it. It was worth the try but I don’t think I would go back again.

Served nice a warm. Rice was perfect with just enough soy sauce and the spam was not overly salty as sometimes can. It's like a hand held meal. Gotta get me another one soon.

Super Ono! Everything was great. Keiki loved their food. Will order again! Downside I should've double checked my pick up order, but I never got my cute sticker I bought :(

I was feeling a little peckish, but didn't want to blow up my appetite before a grand finale dinner planned for later in the evening. Naturally musubi came to mind as an appropriate hunger bridge, and soon thereafter The Musubi Truck came to my phone after a light search of the area. I landed on the Ahi Katsu musubi and a Diet Pepsi. It took about 30 minutes from handing over a $20 bill to being handed my order. The fish was completely cooked through which wasn't surprising per se, but I generally like some rarity to my tuna even if it's deep/flash fried. Overall I'd say this is a place that deserves a visit. The staff were laid back and friendly which is what you'd likely expect for a place like this, but sometimes don't always receive.

It was an easy walk from the Marriott. But the parking lot was empty before noon. Great place to sit with the shade and breeze. We had the deep fried musubi and the mixed meat plate. Food was average.

This establishment was excellent. I ordered the spicy poke and musubi. The atmosphere was wonderful, and the area has a charming ambiance. If you enjoy spicy flavors, I recommend requesting Sriracha on the side. The spicy poke, however, was not as spicy as I expected and was a bit on the salty side for me. Overall I recommend this spot

Honestly, everything was mid. Spicy poke wasn’t too spicy and didn’t have much flavor. Truffle tots were not bad. The deep fried musubi was disappointing, the ratio of the rice vs spam was very uneven. Nothing really stood out and it was especially disappointing because it’s called the “musubi” truck. Portions were small for the price but maybe that’s just how food is priced in the island? I thought the spot was cool, difficult to find parking though.

Food was great. Poke bowl was very good but very plain. We tried both original and fried musubi, both are equally good. The girl who took our orders gave a deep sigh when we asked for water in a cup. That was a turnoff. Otherwise, it was a good experience.
