Koiso Sushi Bar
About
A Masterclass in Maui Sushi
Stepping into Koiso Sushi Bar feels less like entering a typical Kihei restaurant and more like being invited into a private kitchen in Tokyo. This small, unassuming spot is the domain of Chef Hiroshi, who runs the room with a focused, deliberate precision that dictates the entire flow of the evening. If you are looking for a place to linger over a casual meal with a large group, this is not it. The intimate seating capacity means you should come prepared to respect the house rules and the chef's craft.
The Omakase Pursuit
The experience here is almost exclusively omakase-focused. Expect a progression of seasonal nigiri where the quality of the fish takes center stage. You will smell the sharp, clean scent of rice vinegar and freshly grated wasabi the moment you sit down. The fish is pristine, handled with a reverence that highlights textures—from the buttery melt of toro to the firm snap of local catch. The ginger is bright and cleansing, designed to reset your palate between bites of seasoned soy-brushed slices.
Refined Dining in South Maui
Situated in the heart of South Maui, Koiso remains a destination for sushi purists who appreciate quiet, methodical preparation. The acoustic environment is muted, allowing the focus to remain on the plate. Note that parking in the immediate plaza can be tight, especially during the dinner rush, so plan your arrival accordingly. While the reservation process requires patience, the reward is a sushi experience that avoids the tourist-trap tropes often found in coastal towns. It is a place where you go to pay attention to the nuance of the sushi, the heat of the tea, and the quiet consistency of a master at work.

100/10!!! Made 51 calls using two phones to make a reservation a month in advance. IT WAS WORTH THE WAIT AND PROCESS. TRUST THE PROCESS. I no longer need to go to Japan for their sushi. The tofu from the miso melts in your mouth. Every dish was a love song. The fish is fresher than freshwater. The dishes just kept getting better and better. The BEST sushi I had in my entire LIFE! Just when you thought the journey was over the desert was a goodbye hug. Best way to have celebrated my birthday and final goodbye to Maui.

I’ve been all over and eaten much sushi for over 40 years and this was tops and wonderful! So fresh and to watch it being prepared and then slowly devouring each bite…. it was a VERY memorable experience. Great Job Chef and Staff….you were exceptional! 🫶 What a GEM 😌

Finally snagged a res and thoroughly enjoyed it! Service was great, prices very reasonable for the experience and sushi all very high quality. The bad reviews are all from whiny people who don’t understand the reservation process. Definitely check it out if you can get a seat.

Hands down THE BEST Sushi! The Chef is amazing and the service team is as kind and welcoming as can be. We were lucky to get a last minute reservation for 2. Book early. Just plan on coming here and start calling weeks in advance. To the Chef, THANK YOU for sharing your story with my wife and I. And thank you for allowing us to share our story with you and how your sushi has kept us focused for 10 years to get back to Maui to enjoy it! lol

A brilliant "hole in the wall", completely authentic sushi bar with stunningly fresh fish made by the master Hiro-san from Japan (I know that's redundant, but it's intended for emphasis!). The sushi literally melts in your mouth. I didn't have to chew. The service is brilliant, the sushi to die for, and the ambiance unpretentious and authentic. Call early because they fill up quickly!!! 🤤🤤🤤

Our last day on me and my husband’s honeymoon and nothing suited it better than this amazing dinner at Koiso Sushi Bar. We were extremely lucky to get reservations last minute as they are usually booked weeks in advanced. From the moment we were seated to when we left it was nothing short of an amazing experience as well as what I would say the best sushi I have ever had. It was our first time trying chef’s choice “Omakase” and it is definitely the way to do it. The fish melts in your mouth and tastes extremely fresh. Each piece you can tell is made with attention to detail and care. If you can, make sure to make this a stop on your trip to Maui.

All the poor reviews for this place is for entitled people who didn't make a reservation. If you like sushi it's a must stop. The price to fish ratio is insanely good without sacrificing quality. In addition, the people there are so nice and wholesome. Great experience. I would've made multiple reservations if I'd known it would be this great. We made ours on the first of the month a month in advance

Every experience sushi 🍣 experience at Koiso is amazing. Hiro is such a talented sushi 🍱 chef all his creations are artful. Our multi generation Maui real estate team loves eating here together. It’s always the best place to bring family, friends and clients. We always order Hiro’s Omakase where he chooses the freshest fish for sushi and sashimi. Koiso is very poplar with locals and visitors. It’s highly recommended to make reservations WAY in advance, as there are no walk ins. Everyone is so friendly at Koiso and The SaylesTeam always feels at home.

Koiso was one of the highlights of my trip to Hawaii and was so good that I went twice during my stay! Keep in mind, it is RESERVATION ONLY, so call in advance to make sure you can go. The establishment only seats maybe 15-16 people at any one time, but it truly makes for a genuine and one-of-a-kind experience. Watching the owner make sushi right in front of you is quite hypnotic, and the quality of fish you’re getting is well worth the price. Really, really enjoyed this place!
