A Tokyo-Style Slurp in the Heart of Moiliili

Walking into Wagaya feels less like entering a Honolulu eatery and more like being transported to a neighborhood ramen shop in Tokyo. The space is compact, with a focused energy that centers on the open kitchen. You will immediately notice the scent of pork-bone broth—a deep, complex aroma that has been bubbling away for hours—dominating the small, bustling room. It is the kind of place where you come to eat, focus on your bowl, and leave satisfied.

The Craft of Tonkotsu

Chef Hiroshi Fukuoka has perfected the art of the tonkotsu broth here. The signature menu item, the Wagaya Ramen, features a creamy, rich pork-bone soup that clings perfectly to their thin, custom-made noodles. They offer a unique level of customization; you can select your preferred noodle firmness and broth density, allowing you to tailor the bowl exactly to your palate. The chashu is consistently tender, often with a slight char that provides a necessary smoky contrast to the velvety soup.

What to Expect

This is a popular spot for locals seeking a quick, authentic lunch or a hearty late-night meal. Because the shop is intimate, don't be surprised if you end up seated in close proximity to your neighbor—it's part of the authentic charm. The acoustics can get quite lively during peak hours, and while parking in the Moiliili area requires a bit of patience, the depth of the broth makes the hunt well worth the effort. Whether you are a ramen purist or just looking for a solid bowl of noodles in Honolulu, the focus on ingredient quality and traditional preparation makes this a standout in the local Japanese dining scene.

My toxic trait is thinking I can handle a Level 5 spice bowl here without breaking a sweat. Spoiler alert: the ramen won, but it was worth every tear. 🍜🔥 If you’re visiting or just moved to Oahu, this is the 'if you know, you know' spot in Honolulu. It’s cozy, authentic, and the smell of that Tonkotsu broth hits you the second you walk through the door. What makes this place a neighborhood staple is the 'choose your own adventure' menu. You can customize everything: • Noodle Thickness: Thin or thick? I’m team thick for that perfect chew. • Firmness: From soft to firm, they get the texture right every single time. • The Garlic Factor: You can literally choose your garlic level. Just a heads up—go big or go home. It’s a smaller space and always buzzing, so get here early or be ready to make some new friends while you wait for a table. Easily some of the best comfort food on the island! 🤙✨

Can't say anything bad about this ramen! The appetizers are different from your typical American ramen joint, and I would recommend this place based that alone. Tables were almost full despite having just opened, and it's seems like they are used to having a waitlist so plan accordingly. Someone tried to bring their pet dog inside? They were turned away of course. Let's not bring pets into a small crowded restaurant.

Really great tan tan men. Competes with Japan and is a fair price for the portion. Dumplings were awesome as well but on the small side which I actually prefer. Cucumbers were also very good and the marinade was 10/10!! Service was impeccable and the food came out very quick. Put your name on the list on their website since there’s not a ton of seating but people are in and out quick. The location has parking which was nice. The restaurant itself is exactly what you want from a local ramen spot…homey with good vibes and very comfortable.
