Wabisabi Dining
About
A in the Heart of Honolulu
Stepping into Wabisabi Dining feels less like a typical Honolulu eatery and more like discovering a neighborhood izakaya tucked away from the frantic pace of Waikiki. The space is intimate, often characterized by a lively buzz that bounces off the minimalist, warm wood interiors. It is the kind of place where the clinking of sake glasses competes with the focused intensity of the chefs working behind the counter.
Crafting the Omakase Experience
Chef Hiroshi Minamiyama brings a meticulous approach to the plate, focusing on seasonal Japanese ingredients that bridge the gap between traditional techniques and island accessibility. While the menu shifts to honor the current harvest, regulars consistently seek out the high-grade sashimi platters and the intricately prepared grilled items. The charcoal-grilled skewers carry a distinct smoky aroma that fills the room, grounding the sophisticated plating in a rustic, comforting reality.
The Practical Side of Fine Dining
Visitors should be prepared for a cozy, tight-knit seating arrangement that encourages eavesdropping on the neighboring table’s food recommendations. It is a fantastic spot for those who appreciate a slower pace of dining, where the sequence of small plates is treated as a narrative rather than just a meal. Because the kitchen prides itself on precision, don't expect lightning-fast turnover; this is a destination for conversation and lingering. Parking around this district can be a test of patience, so arriving a few minutes early is a smart play to ensure you aren't rushing into your first glass of shochu.

The food was good, but it wasn't worth the price. They charge a lot, but don't give much. We had two Tonkatsu plates and it came out to over $50 (not including tip). We did this back in August and we've never been back and won't be back. I understand that the restaurant business is tough, but if you're going to charge a lot for your food, at least give some decent portions and create some value.
