Taiga Ramen
About
Slurping Through Honolulu’s Hidden Ramen Gem
Tucked away near the bustling heart of Honolulu, Taiga Ramen has carved out a dedicated following for those who value substance over spectacle. When you walk through the doors, you are immediately hit with the comforting, heavy scent of pork bone broth that has been simmering since the early hours of the morning.
The Tonkotsu Obsession
The star of the show here is undoubtedly the Tonkotsu. The broth arrives thick, opaque, and deeply savory, clinging perfectly to the firm, springy noodles. Unlike the light, clear soups found elsewhere in Hawaii, the kitchen staff here leans into the traditional, creamy style that coats the palate. You will notice the rich layer of fat and the melt-in-your-mouth chashu pork that is clearly braised with patience.
An Unfussy Kaka'ako Vibe
The space is functional and efficient—a place where the focus is entirely on the bowl in front of you. It is the kind of spot where you might have to navigate a bit of a wait during the lunch rush, and the acoustic environment can get quite lively as people duck in from the tropical sun to cool off with a steaming bowl. It is not designed for lingering over long conversations; it is designed for the singular, focused pursuit of excellent noodles.
Practical Dining Notes
If you are heading over from the Kaka'ako or Ala Moana districts, keep in mind that parking in this part of Honolulu can be a game of musical chairs. The menu is concise, reflecting a kitchen that prefers to do a few things perfectly rather than attempting a sprawling, diluted variety. Whether you are a local worker grabbing a quick workday lunch or a traveler seeking an authentic, no-frills Japanese dining experience, this shop delivers the intense, umami-packed flavor profile that makes for a truly memorable meal.

I visited this parlor on the last day of my trip to Hawaii and tried the Spicy Ramen. I loved it because it has a well-balanced flavor — not the rich, heavy taste of pork bone ramen, but a more refreshing and light profile. The chef, Kevin, was also very friendly, which made the experience even better. :)

The miso and shoyu ramen were so good. Also the Nagoya wings were crispy on the outside and hot and juicy on the inside. Juice literally burst out on the first bite. Definitely coming back 🥹

I have eaten here multiple times and loved it. Im no ramen guru but this had been one my favorite spots because of the noodles, unfortunately I gave them 3 stars because twice the noodles have been way undercooked, clamped into a ball and wierd texture. Definitely not normal, Very disappointed. Not sure if I will give 3rd time a try.

This place is great. I know ramen during the day might not be everyone's vibe but I wasn't feeling too good yesterday and I really wanted something like this. Staff knew something about Japanese ramen because wow. Delicious. Huge portion size too. I can't wait to come back for more.

The BEST ramen I've ever had, truly. We visited this place 4 times during our stay at Waikiki. We ended up getting to meet the head chef and owner, who is extremely nice!

Tucked away inside the mini food hall of Mitsuwa is a hidden gem! Taiga Ramen serves up some delicious ramen as well as side dishes to complement the warm, flavorful and variety of ramen bowls to choose from. Every ramen bowl Ive had was very tasty. From the Shoyu, Tantan and Spicy…each of them satisfy a piece of my tastebuds and makes them want to dance and celebrate. Dont forget the delicious fried rice and gyoza as well! The staff is very friendly and prompt. If I do have to wait a during a rush hour it’s not a problem since I can enjoy a beer or walk around Mitsuwa. There are clean bathrooms and plenty of seating so convenience is also a plus.

Super underrated ramen joint that is never too busy for a quick bite. Price and speed combined with high quality ramen inside a food court makes this one of the best value meals. Great lunch option that doesn’t break the bank.
