Sushi Murayama
About
A Masterclass in Edomae Precision
Stepping into Sushi Murayama feels like being transported directly to a quiet corner of Ginza. This intimate dining space in the heart of Honolulu prioritizes the integrity of the fish above all else. Chef Murayama handles each piece of nigiri with a focused silence, his movements precise and practiced, echoing years of rigorous traditional training.
The Omakase Flow
The experience is centered around the omakase menu, where the seasonality of ingredients dictates every course. You might encounter Hokkaido sea urchin that melts instantly on the tongue, followed by fatty tuna that has been aged to achieve an ideal buttery texture. The vinegar-seasoned shari is served at precisely body temperature, designed to harmonize with the varying fat content of each nigiri selection.
Atmosphere and Expectations
The room is sparse and minimalist, allowing the visual beauty of the sushi to take center stage. There is no background noise other than the soft clinking of ceramics and the chef’s occasional explanation of the origin of the daily catch. Be aware that the space is quite compact; you will be sitting shoulder-to-shoulder with other diners, which only heightens the sense of communal focus on the meal. If you prefer a loud, boisterous izakaya environment, this is not that. Sushi Murayama is for those who treat sushi as a form of art rather than a quick dinner. Parking in this part of Honolulu can be a test of patience, so plan to arrive early to ensure a stress-free start to your evening.

So so delicious! We had a fabulous time: amazing food, great atmosphere, and wonderful people. The wood spoons were cool!

A little difficult to find but worth it. Its on the 3rd floor. The windows are very tinted so you may miss it (I did, lol). I only got take out but want to come back to dine in. I got the tekka roll and should ginger poke bowl with hamachi since thy were out of tuna/magura. The poke bowl was ENORMOUS lol. ALSO, The wasabi is very Good. I will probably get 2- 3 meals out of it! The staff was very nice!

Enjoyed this amazing, kind of hidden (third floor with minimal signage) restaurant at the suggestion of a local, and it was delightful. As a solo traveler, I opted for the 10 course dinner for $100, which meant I had to sit at a table. The sushi bar, where you can chat with the chef, is reserved for the 15 course/$188 customers. Nbd, just an fyi. I’m 49 and was not starving so I even struggled to even finish the 10 course dinner despite the great flavors. I kind of wished they’d slowed the roll out of food so I could relax and enjoy it. All of the food was so good, very unique flavor combos, and so very fresh!
