Sushi Ginza Onodera
About
A Masterclass in Edomae Tradition
Stepping into Sushi Ginza Onodera feels less like entering a restaurant and more like being transported into a quiet, focused sanctuary of Japanese craftsmanship. Located in the heart of Waikiki, this high-end destination prides itself on the traditional Edomae style of sushi. The fish is flown in daily from Toyosu Market in Tokyo, ensuring that the nigiri served on the hinoki wood counter maintains the same exacting standards found at their flagship locations in Japan.
The Art of the Omakase
The experience is defined by the rhythm of the chefs. You will hear the sharp, rhythmic slicing of seafood followed by the gentle patting of warm, vinegar-seasoned rice. The signature offerings often feature tender cuts of bluefin tuna and seasonal specialties like kohada (gizzard shad). Unlike casual sushi spots in Honolulu, the focus here is strictly on the purity of ingredients—minimalist, precise, and devoid of heavy sauces or unnecessary garnishes.
Reflections on the Space
The atmosphere is serene and minimalist, perfect for those who want to appreciate the nuanced temperature differences between the fish and the shari. It is an ideal setting for a celebratory dinner or an intimate evening where conversation flows at a hushed, respectful volume. A minor quirk to note: the precision of the service means pacing is deliberate, so arrive ready to dedicate a couple of hours to the full progression. It is a refined departure from the typical bustling beachside dining scene, offering a slice of authentic Ginza refinement right here in Hawaii.

Bad experience. I felt like I just had a fast food. Only took 40 mins from first course to the last one. Service was ok but rushed. Food quality was bad. Only 1 course had uni and it was not fresh and melted already and also had shell in it. No high end fish. Sit very close to other clients, I experienced a very strong and bad cigarette/ weed odour.

The service is super friendly and the ambience was clean and authentic. We enjoyed the omakase. We were really impressed by how very accommodating the staff were to the two couples that came after us. They were both late. We have seen other omakase places were the chef doesnt allow them to come but Sushi Ginza Onodera was very professional and courteous to all their patrons. One patron had to run back to their hotel room as they were allergic to fish. The staff offered to allow them to the join the next seating in the private room area or come back by 6pm. The sushi was solid but didn't blow me away compared to the other omakase restaurants available on island with the same or lesser price tag. We came here for my wife's birthday which I noted on our open table reservation but no mention of the celebration which we have come to experience at other places. I enjoyed the amaebi. My wife enjoyed the Spanish mackerel. I had the sake tasting but nothing really blew me away unfortunately just like the sushi. I really wanted to like the place more since my friend is a regular and raves about it. I will say it was a nice touch that after the omakase chef explained the dish, a server would come with an iPad to show you the fish. Heads up -They asked if we were from here and knew we wete local but we didnt know to ask for the kamaina discount which is 10%. It would have been nice if they would have just asked us for our ID when they knew we were Kamaina.

Came here for lunch over the weekend. The service felt like an educational experience as well, as the host showed us pictures of what the fish looked like with each course. All staff were friendly and accommodating. There are 4 designated spots for parking right beside the restaurant. The fish was fresh and tasty. Definitely worth the visit.
