Hand-Crafted Traditions in the Heart of Honolulu

Tucked away from the bustling tourist corridors of Waikiki, Shingen serves as a quiet refuge for those seeking authentic Japanese soul food. This spot is defined by the rhythmic clinking of ceramic bowls and the subtle, earthy aroma of buckwheat milling in the air. The interior is refreshingly understated—a minimalist space that lets the steam from their signature soba noodles take center stage.

The Art of the Noodle

The main draw here is the house-made soba, prepared fresh daily. You can smell the toasted nuttiness of the buckwheat the moment the kitchen sliding doors open. Their tempura is equally noteworthy, featuring a light, shatteringly crisp batter that avoids the greasiness found in typical fried fare. It is the kind of place where you come for a quick, focused lunch or a relaxed evening of sharing small plates.

Local Nuances

While the craftsmanship is top-tier, come prepared for a bit of a localized quirk: the seating is cozy and fills up quickly during the peak lunch hour. If you are driving into this pocket of Honolulu, parking can be a bit of a tight squeeze, so give yourself an extra five minutes to secure a spot. Whether you are craving a cooling zaru soba on a humid afternoon or a hot bowl of broth to settle into the evening, this local favorite captures a specific, honest approach to Japanese dining that focuses entirely on the integrity of the ingredients.

First time at Shingen at Stix. Ordered the lunch special with soba noodles and the Kuro-American wagyu flap skewer…great food. We tried the cold noodles and it did not disappoint. Also the wagyu was tender and flavorful. Finished it off with the soba-yu!!! You have to try it. Our server (Nick) also provided great service and recommendations! When in Waikiki, you definitely have to make a visit!!!

I’ve never left a food review, until now. The soba noodles with the spicy sesame miso sauce was amazing. Definitely top #5 meal for me. I’m gluten free so I’ve always avoided noodle places, however, I did not know soba noodles are prepared with buckwheat which is gluten free. My server Nick was so accommodating, patient and helped educate me on all aspects of the menu. Thank you again, Nick- I will be back!

Visiting Hawaii from California, we stopped by after a day of swimming—hot and tired—and this place really hit the spot. The cold draft beer was refreshing, and the cold soba was just what we needed. The noodles were nicely chewy, and the dipping sauce was very flavorful. The moringa soba, in particular, was cooked slightly more al dente, which made the texture even better. Simple, satisfying, and perfect after a long day in the sun.

If you are looking for a hidden gem that truly deserves the spotlight, you need to visit Restaurant Shigen Soba Izakaya at STIX. We were drawn in by our server, Nick, who promised us the best Japanese food in Hawaii—and he absolutely delivered. I ordered the chashu soba noodles, and I completely lost myself in the incredible flavors. It’s honestly hard to believe this place doesn't have a Michelin star! Nick was fantastic and made us feel right at home, like part of the family. Do yourself a favor, stop by for a divine break, and be sure to ask for Nick!

Savoury, fresh, authentic soba noodle soup perfect for your Japanese soba cravings. I ordered the Spicy Miso Tsuke. The spiciness is enough to give a kick without overpowering the miso flavour. The soba has this chewy yet firm texture. You have the option of what type of noodle you want: Soba, Moringa (Malunggay leaves?), an Ube Udon. We also got the Aburi Shime Saba and they blow torched it in on our table, which was cool to see. All the front of staff crew were helpful, fast, and happy to serve their clients. The place can get busy in the evening so plan ahead!

I just stumbled across this place and I was wanting some cold soba noodles… glad to say that I went to the right place! Food is excellent (the lunch combo set is in particular super well priced as well). The server Nick is also super friendly and nice as well… this adds really to the experience and I am super thankful for him!

One of the very few places that specialize in Soba noodles on the island! This was the perfect lunch - light, cool and refreshing, and doesn’t leave you feeling heavy because it’s soba! We had the lunch combo, one with curry and the other with tempura rice bowl. It’s a very good portion and it reminds me of the soba noodles I had in Japan. It tastes the same! The cold broth is full of flavor and is perfect for beating the hot and humid weather here. Glad we came across this place and we’ll absolutely come back while living here! Service was fast and efficient. We sat and the bar and got our food within 5 mins. It’s inside a food hall, so expect a lively atmosphere. Highly recommend!!
