Pacific Flavors Meet Comfort Cooking
Tucked away in the heart of Honolulu, Ribs and Broth brings a specialized focus to the table that defies the typical island tourist trap. Here, the menu stays laser-focused: slow-cooked, fall-off-the-bone ribs and deeply aromatic broths that mirror the multicultural heritage of O‘ahu.
A Symphony of Smoke and Savory Steam
Stepping inside, the first thing you notice is the heavy, sweet scent of charred proteins colliding with the clean, ginger-forward aroma of simmering stocks. The kitchen treats their ribs with a meticulous touch—expect a dark, sticky glaze that balances sweetness with a sharp, local-style tang. If you lean toward the broth side, the bowls arrive piping hot, topped with generous bunches of fresh scallions and bok choy that provide a necessary crunch against the tender meat.
The Local Pulse
This spot isn't designed for a quiet, white-tablecloth evening. It is loud, vibrant, and moves at the fast-paced rhythm typical of Honolulu’s bustling culinary scene. Because the space is compact, you might find yourself shoulder-to-shoulder with neighbors or regulars grabbing a quick lunch. It is an ideal refuge for solo diners looking for a hearty, straightforward meal or friends gathering before a long beach day. Be mindful that during the dinner rush, the acoustics can get a bit energetic, making it better for a lively catch-up than a hushed business meeting. It remains a standout destination for anyone craving authentic, no-nonsense comfort food while exploring the islands.

While visiting Waikiki, we craved for Vietnamese cruisine. We discovered Ribs and Broth, and it quickly became one of our favorite places to eat. The food was incredibly fresh, flavorful, and comforting. We tried several dishes and every one of them was delicious. The Oxtail Pho and Steak Tendon Pho were so clean and flavorful that you can actually drink the soup straight from the bowl. The dry egg noodles with seafood and BBQ pork were perfectly seasoned, and the grilled pork and chicken bánh mì had amazing flavor with fresh, crispy bread. We also loved the appetizers — the fresh spring rolls were light and refreshing, and the crispy egg rolls were perfectly crunchy which I love because one of the ingredients is taro roots. The vermicelli noodles with short ribs and egg rolls were another standout dish-I requested to substitute with short ribs with the BBQ pork and the chef was happily accommodated it. The service was warm and welcoming. The atmosphere was relaxed and inviting. In fact, we enjoyed it so much that we came back three days in a row during our stay — that alone says how good the food is! Highly recommend this place if you’re looking for authentic and satisfying Vietnamese food in Waikiki.

Oooohhhhhh sooo good! The service is amazing and the atmosphere is comfortable and inviting. The open kitchen blesses you with all the savory scents. Lively music and open walls give’s it a street restaurant feel. Love the hustle and bustle of people walking by. Let’s talk Food! I had the beef stew pho and it was the Best I have ever had. Everything is so fresh and all the flavors are so independent. Making it the Best Pho I’ve ever had. My tummy is happy and full.

The pho here is exceptional, a dish that truly hinges on the quality of its broth. Since the process is traditional—simply pouring the hot, savory liquid over the raw beef to cook it—the broth must be the star. Amazingly, this spot nailed it! To find such a rich, flavorful, and perfectly seasoned broth, especially within a bustling food court setting, is a genuinely pleasant surprise. Highly recommended.
