Manichi Ramen
About
A Slice of Fukuoka in Honolulu
Stepping into Manichi Ramen near the Ala Moana district feels like ducking into a high-energy noodle shop in Japan. The kitchen is commanded by a rhythmic symphony of clattering ladles and the aggressive steam hiss of boiling cauldrons. It is loud, unapologetically humid, and smells intensely of rendered pork fat and roasted garlic—the hallmark of authentic Hakata-style tonkotsu ramen.
The Broth That Defines the Bowl
This isn't your instant college meal. The culinary backbone here is the heavy, opaque tonkotsu broth, simmered for hours until it achieves a creamy, lip-coating richness. Fans of the craft swear by the signature Manichi Ramen, which pairs thin, firm noodles with a savory depth that lingers. You will find the egg is consistently jammy, with a custard-like yolk that cuts through the saltiness of the shoyu-based base.
What to Expect When You Visit
If you are heading over for a quick lunch, be prepared for a bit of a shuffle. The seating is efficient and tight; you are here to eat, not to lounge for hours. It is an ideal spot for solo diners or pairs who appreciate a no-frills environment where the focus remains strictly on the bowl. Don't be surprised if you have to wait for a stool during the peak lunch hour, as the local office crowd treats this place as a daily staple. If you have an aversion to dining in close quarters with your neighbors, you might find the proximity a bit overwhelming, but for the depth of flavor in their spicy miso bowls, it is a compromise most regulars are more than happy to make.

We’ve recently moved out of Hawaii and ate here often. The staff are great as well as the food. I usually ate the curry ramen (delicious). Both my wife and I loved this place and do so miss it. Staff made us feel like family and we do miss them and the food. Wish this place the best, highly encourage others to give them a try, and will definitely stop in for a bite and a hello next time we come to Oahu.

A small, no-frills ramen spot near Ala Moana that feels straight out of Japan. Traditional Japanese craftsmanship, nothing fancy — just real, honest, extremely tasty food. Not only classic ramen, but also tsukemen worth trying, and the homemade pork gyoza is an absolute bullseye. One of those places where you forget you’re in Honolulu and feel like you’re eating in Japan itself

Solid bowl by US standards. Expecting Japanese comparison is silly, so I won’t go there. Creamy Curry/Karee bowl lacked curry flavor and spice but it was very creamy and the flavor was there. Char siu lacked in both amount and lean/fatty pieces with just one lean piece without char. The special had greater toppings but the broth further lacked depth. Char siu was forgettable. The Classic Pork Gyoza was solid, not sure today was an award winning day but it was solid and I can’t complain. Half crisped half soft and tender. Would have liked some chili or chili oil for the table. Recommend if you’re feeling ramen, don’t go with unrealistic (Nihon/Japan quality) and you’ll be happy.
