Kin Chan Sushi Incorporated
About
Mastering the Art of Edomae in Honolulu
Tucked away from the bustling tourist corridors of Waikiki, Kin Chan Sushi Incorporated serves as a quiet sanctuary for purists seeking a legitimate Omakase experience. The space is intimate, defined by a minimalist wooden counter that puts the chef’s knife skills center stage. Here, the focus remains entirely on the progression of seasonal fish, prepared with the precision one expects from a traditional Japanese craft house.
The Omakase Flow
Chef Kin Chan operates with a rhythmic efficiency. You will notice the subtle scent of vinegared rice hitting the air as he hand-shapes each piece of nigiri, topping them with pristine cuts of bluefin tuna or sweet scallops. The menu follows the edomae tradition, emphasizing the balance between the temperature of the rice and the texture of the seafood. It is not a place for flashy rolls or excessive sauces; instead, the simplicity allows the quality of the ocean-fresh ingredients to speak for themselves.
What to Expect
Dining here feels like an exclusive invitation. The acoustics are muffled, creating a calm environment where the faint sound of a sharp blade against wood provides the background track. While the atmosphere is serene, be aware that the seating is quite limited, making reservations a necessity rather than a suggestion. It is an ideal spot for those who view a meal as a meditative practice rather than just a quick bite. Whether you are a local living in the Kaimuki vicinity or a visitor tired of the noise of the city, this counter offers a refreshing slice of Tokyo-style dedication right here on the island.

Wanted to write a review about their omakase style dining. Please don’t come if you aren’t prepared to pay a pretty penny. The sushi is amazing and very good quality. The chef prepares everything in front of you and is a very humble guy. He’s super nice and always a great experience when I want an authentic experience. Everything was wonderful.
