A Masterclass in Honolulu Edomae-style Sushi

Stepping into Kats Sushi, you immediately notice the minimalist aesthetic that shifts the focus entirely to the wooden hinoki counter. This intimate space in Honolulu is helmed by Chef Katsumasa Katsumata, who brings a rigorous, traditional approach to the Hawaiian seafood scene. Unlike the sprawling, loud dining rooms found elsewhere in the city, this spot feels like a quiet sanctuary dedicated to the craft of Edomae-style sushi.

The Omakase Journey

The menu here is almost exclusively omakase, a deliberate choice that allows the kitchen to showcase peak-season ingredients sourced directly from local markets and flown in from Japan. You will smell the faint, clean scent of seasoned vinegar on the shari (sushi rice) as it is pressed, served at precisely the right temperature to contrast with the cool, firm slices of fatty tuna or firm, sweet snapper. The precision with which each piece is prepared—brushed with the perfect amount of house-made nikiri sauce—is a constant reminder that this is a place for those who treat sushi as a focused experience rather than a casual meal.

What to Expect When You Visit

Because the seating is strictly limited, securing a spot feels exclusive. Be prepared for a focused, quiet environment; this is not the place for rowdy groups. If you arrive early, you might notice that the entrance is easy to miss, tucked away in the bustle of Honolulu’s vibrant urban landscape. Parking in the immediate vicinity can be a bit of a challenge, so plan your arrival accordingly to ensure you don’t feel rushed before the first course arrives. If you appreciate the artistry of a chef who has dedicated decades to perfecting the balance of rice and fish, Kats Sushi offers one of the most honest and disciplined culinary experiences on the island.

Update: as of November 2025 Kats is still delicious! I have absolutely loved all of the sushi we've tried the last few times we've come in (specifically the hamachi, scallop hand roll, unagi, and salmon) and legitimately cannot wait till we come back to visit Kats Sushi again. Additionally, everyone who works at Kats is so friendly and offers next level service. This place rocks and is one of my favorite spots to visit on Oahu! Original review: Kats Sushi is delicious and the quality is absolutely fantastic! This review from me is coming many months after my girlfriend and I last ate here on our last trip to Oahu (in May 2024) but we still talk about this place a ton and are excited to come back on our next trip. Everything we had was fantastic and a great value-- I remember the unagi especially being a stand out. Honestly some of the best sushi I've had anywhere (especially for an ayce spot). Street parking was also easy enough and the staff at the restaurant were incredibly friendly and accommodating. We absolutely love this place and are excited to come back again soon!

All You Can Eat is $32.95. Add 3% fee when using a credit card. Quick service and friendly staff. Casual and relaxing neighborhood sushi place. Really enjoyed the added flavor of shiso leaf in some of the hand rolls. It was my first time trying a clam nigiri. I like the texture and clean flavor. Salmon Skin Hand-roll is my favorite. Soda and tea are available for purchase. Party Platter option available Nigiri is $1.50 per piece snd Hand-roll is $2.50 per roll, no minimum order.

Bra~, this place is legit (perhaps the best deal on the rock for all the delicious nigiris, hands down). Rice proportion is just perfect — you taste more sashimi with the perfect amount of rice. Ahhh leche par, coming again next Friday with some ice cold beer. Mahalo~

Holy secret spot Batman! -Reservation Recommended- This place was awesome! We arrived right at open and were seated at the bar. As we read through the menu one of the chefs was giving us advice. All the staff were so nice and helpful! The feed tasted amazing and arrived at a perfect pace. When we finished they double and tripled checked as they wanted to serve us more! Can’t recommend enough!

Exceptional service!! It was very busy and you only get to order five items (1-2 pieces depending on the item) at a time but we never waited long for our next round! Very quick and efficient service from everyone in the restaurant. I could not believe how quickly we were all receiving our food, round after round especially since everything is made to order! Also it’s BYOB!!!! Say less! Thank you so much for the amazing food and hospitality!

Very fresh sushi in a very old school setting that's been around for 56 years! Some of the freshest handmade nigiri you can get outside of the touristy spots in Waikiki. Absolute standouts were the scallop handroll, the hamachi nigiri, the spicy unagi handroll, the Hawaiian handroll, and the California handroll. The interior is very intimate with outside seatijg available. Great spot and great value, certainly worth a visit.

The fish and rice quality was excellent, creating a harmonious blend in each bite. The sushi was amazing, compared to other all you can eat sushi restaurants I’ve been worldwide. The sushi had a delightful melt-in-the-mouth experience, earning a solid 10/10 recommendation. Despite servers occasionally overlooking small requests like water during busy times, their eventual follow-up mitigates concerns. Patience is advised for a popular all-you-can-eat restaurant, ensuring an overall enjoyable experience.
