One of the best omakase experiences we’ve had. The fish was really fresh, and the chef took a subtle creative approach to the traditional omakase pieces. Super worth it. Right up there with the best places in NY, west coast, etc.

Hihimanu Sushi is easily one of the most memorable omakase spots on Oahu, equal parts meal and art show. The chief brings his own personal touch to every course, right down to the hand picked plates and utensils chosen to suit each dish. It started with a gorgeous snapper dressed in orchids and monkfish liver and only got better from there: award-winning Pacific bluefin he sourced himself at auction (We got the chutoro cut!), an oyster with quail egg and umibudo as a nod to his home, and a Pacific geoduck so fresh it was still moving as it was served. The little luxuries: fresh wasabi, seasonal truffle, Italian caviar are generous and beautifully done, but his house-made rose salt and cherry blossom salt steal the show, adding the loveliest floral note to the fish. With fish flown in daily from Japan, the freshness is unreal

Chef Ray is incredibly talented and made the entire experience feel special. The staff were attentive, friendly, and provided top-notch service throughout the night. Truly the best sushi we’ve ever had! Easily a 5-star experience and a must-visit while in Hawaii!
