Furusato Japanese Restaurant
About
A Taste of Traditional Japan in the Heart of Waikiki
Stepping into Furusato Japanese Restaurant feels like a quiet departure from the bustling energy of Waikiki Beach. Tucked away within the Hyatt Regency, this long-standing institution has carved out a reputation for precision and calm. The atmosphere is formal yet unpretentious, defined by warm wood tones and the soft clatter of ceramic bowls, making it an ideal retreat for travelers seeking a reprieve from the tropical heat.
The Art of the Shabu-Shabu
The kitchen here focuses heavily on the ritual of Shabu-Shabu and Sukiyaki. You will find that the thinly sliced, high-grade beef is the undeniable star, arriving with precise marbling that melts almost instantly in the simmering kombu broth. Watching the steam rise as you dip fresh vegetables and tender proteins is a sensory highlight, though do be prepared for the specialized tableside setup, which creates a focused, slow-paced dining cadence that rewards patience.
Refined Flavors for the Discerning Palate
Beyond the boiling pots, the menu leans into classic preparations. The sashimi is consistently fresh, reflecting the restaurant’s deep ties to local Honolulu suppliers who prioritize quality over convenience. While the space is undeniably elegant, the layout is efficient, occasionally leading to a tighter seating arrangement during peak dinner hours. It is this minor proximity to other diners, however, that adds to the authentic, bustling izakaya-style energy common in Tokyo’s more established districts.
Furusato is a destination for those who value culinary heritage. Whether you are looking for an intimate dinner after a day of surfing or a refined meal for a special occasion, the dedication to traditional Japanese techniques remains the defining feature of the experience. The service is disciplined and unobtrusive, allowing the ingredients to speak for themselves in a setting that bridges the gap between Pacific luxury and mainland Japanese culture.

A small place with 30 seats, that gets diners in and out quickly. Not a place to lollygag but to get in and have good sushi/sashimi. Ingredients tasted fresh.

Went here because of the positive ratings, and was not disappointed! It was my first time trying uni, and I've been missing out. The food was tasty and the service was fast and friendly. Will be back sometime!

Tidy, smartly designed, and intimate restaurant across from the beach and on the main drag in Waikiki, offering delicious sushi made of fresh, impeccable ingredients. Quick, attentive, unobtrusive service. My wife and I had lunch there in March of 2026, and appreciated the good value for the area ($29 for the udon set, pictured). We were also very pleased that they easily accommodated her Celiac allergy and offered gluten free options.

Unbelievably fast service, there were four chefs and two servers for a relatively small restaurant. Sashimi were the best, so fresh and scrumptious. Dragon roll was also very good, though little heavier on the sauce. Generous portions. Highly recommend

My son and I were in the mood for sushi and wanted something walking distance from our hotel. After being in Japan for two weeks, the prices of course were much higher. But that should be expected on Waikiki Beach across the street from the Duke Statue. Both the rolls and the sushi were large and had great flavor. We had no trouble finishing the Bridge, but we were definitely satisfied. The sake was poured with generosity overflowing into a wooden box. We both left with smiles on our faces.

Went here because it seemed they have some vegetarian options too. Make sure to aso before you order because some items still came topped with roe or salmon. The avocado roll was tasty. Pricey, but wouldn't expect otherwise in this area.

This was a perfect place for our last dîner in Honolulu. We wanted a great sushi place and we're not disappointed!!!! The fish was extremely fresh, and perfectly seasoned with wasabi ( proposed option). The restaurant was nicely decorated, making it a cosy place in this busy area. We loved it.
