Fujiyama Texas
About
A Slice of Osaka in the Heart of Honolulu
Stepping into Fujiyama Texas feels less like walking into a Honolulu eatery and more like discovering a hidden izakaya in the backstreets of Osaka. This spot is defined by its dedication to kushikatsu—deep-fried skewers that shatter upon the first bite, revealing tender meats and crisp vegetables within.
The Art of the Golden Skewer
Chef and owner Hiroyuki 'Hiro' Mimura brings a precise, craftsman-like approach to his fryers. You won't find heavy, grease-laden batter here; instead, the coating is remarkably thin and airy, allowing the natural flavors of ingredients like lotus root, quail eggs, and wagyu beef to take center stage. The scent of hot oil and savory tonkatsu sauce greets you immediately at the door, signaling a meal that prioritizes comfort over formality.
Mid-Century Vibes and Local Flavor
The interior leans into a retro aesthetic that makes it a favorite for those seeking a casual, high-energy dinner near the bustling Kaka'ako and Ala Moana districts. It is a space built for loud conversations and clinking beer glasses. Be prepared for the cozy footprint; the dining room is intimate, meaning the atmosphere gets lively and boisterous quickly as the evening progresses. It is the perfect venue for a post-work beer or a late-night snack when you want something salty, crispy, and uncompromisingly authentic.
Parking in this urban corridor can be a bit of a puzzle, but the payoff—a perfectly fried skewer dipped in their signature, strictly-no-double-dipping sauce—makes the effort entirely worth it for locals and visitors alike who crave a genuine Japanese street-food experience in Hawaii.

I don’t work to make a living, I work so that I can eat at Fujiyama Texas EVERY NIGHT! I work a job where I don’t get out till 1am and all I look forward to is getting a surf and turf from here. Everyone that works there is super sweet, especially Karen. The restaurant is set up beautifully and the atmosphere is just what you need after a days of work, or just to go out with friends. It’s the perfect place to get those late night cravings for an amazing meal. Lord bless this restaurant for being open so late every night, Batman has nothing on them. If you ever need a warm place to eat with excellent service and staff, this is the place to go!

Our first choice of Tori Ton was booked up solid for a Friday night, so my friends and I decided on Fujiyama Texas Izakaya after calling and confirming they had a table for six available. As we entered we were immediately greeted and seated. After placing our order for Izakaya, Japanese comfort foods, and drinks that’s when our service went downhill. One of my friends ordered a Lilikoi Lychee Chuhai, but requested only Lilikoi. The waitress agreed it was possible, however instead served her the Lilikoi Lychee without alcohol. Basically a drink my friend did not not order, so after a sip she waved the waitress down and the waitress insisted my friend was wrong even though we all heard the order. The cringe part is when the waitress became confrontational and gave attitude the entire night. Realize our table ordered lots of food & drink. Overall the skewers, dishes, curries were delish. The Japanese beer… well it’s always good. The vibe was good except for that one sour waitress. We still tipped as normal, but most of us agreed on never returning (we’ll spend elsewhere).

A friend and I needed to kill some time before heading to watch the University of Hawaii men’s basketball game so decided to stop here. And boy are we glad we did. This place was busy when we got there but they were still able to squeeze us in at the counter which I highly recommend. We watched the fry chef prepare all the delicious kushikatsu that were ordered and fry them to perfection. We enjoyed an assortment ourselves over a nice cold Asahi draft beer. Definitely get the fried chicken wing, Tamago egg, pork, beef, salmon and hasu. The food was fantastic and service was great. Loved the ambiance as well. We’ll definitely be back here again soon. 🤙🏼🤙🏼🤙🏼
