A Modern Take on Maui Soul Food

High above the coastline of West Maui, Star Noodle serves as a refreshing departure from typical beachfront dining. The space is sleek and industrial, defined by concrete floors and an open kitchen where the rhythmic slap of dough hitting stainless steel surfaces anchors the soundscape. If you sit near the windows, the natural light floods the dining room, but be prepared for a bit of a wait; the popularity of this Lahaina staple means the dining room stays buzzing with high-energy chatter from open to close.

The Craft of the Noodle

Chef Sheldon Simeon’s influence remains baked into the DNA of the menu. The kitchen specializes in house-made noodles, with the garlic noodles acting as the non-negotiable centerpiece for most tables—a tangle of chewy, savory perfection tossed in oyster sauce and enough garlic to leave a lasting impression. Beyond the noodles, the Vietnamese crepes and the Hapa Ramen offer a deep dive into the fusion of cultures that define Hawaiian cuisine. The broth is simmered for hours, creating a rich, opaque depth that coats the palate with each spoonful.

Why You Should Go

This is the spot for groups who want to share a variety of small plates rather than sticking to a single entree. It feels polished yet unpretentious, making it ideal for a mid-week dinner after a day spent exploring the nearby slopes of the West Maui Mountains. While the parking lot can get remarkably tight as the evening rush peaks, the payoff—a cold sake or a craft cocktail paired with pan-fried pork dumplings—makes the minor logistical shuffle entirely worth the effort. It is a loud, flavorful, and fast-paced environment that captures the modern culinary spirit of the island.

Honey and the rest of the staff provided such a wonderful experience from being greeted to when we left. The food was so tasty and flavorful. The singapore noodles and ahi belly was absolutely to die for! Stunning waterfront views from our table. Great place to celebrate a birthday! Will be coming back :)

We have been coming to Star Noodle for years, ever since its original warehouse-style location on a hill in Maui. We have supported them through every change, move, and menu update. Unfortunately, tonight was the first time we left truly disappointed. Our waiter, Andy, started off very friendly. However, the moment we mentioned that we were not interested in ordering drinks, something shifted. His tone, energy, and level of attention noticeably declined. We understand that restaurants and servers depend on drink sales, but the change was so obvious that it took away from the experience. We ordered our longtime favorite dish, the Vietnamese crepe, and immediately noticed something was wrong. It arrived cold and completely soggy. It was not only soggy where the filling sits but even the top layer, untouched by anything, was limp and rubbery, with oil seeping off of it. Despite my family feeling awkward about it, I asked Andy if this was normal. He looked confused, did not directly answer, and only mentioned that some parts are supposed to be cold. This was not a matter of temperature preference. It was clearly not prepared correctly. What surprised us even more was that he did not offer to replace the entire dish. Instead, he asked if we just wanted a second pancake shell. Since no other option was offered, we said yes. The second one came out warm and crispy, which showed us exactly how the first one should have been, but by that point the experience had already taken a downturn. Note: the recipe has also clearly changed since the last time we were here. The star of the show, the mushrooms are no longer in the dish!! We had planned to order more food, but after the uncomfortable interaction and feeling more like a burden than guests, we decided to end the meal early and leave. After so many years of loyalty and wonderful memories here, tonight left us disappointed and a bit sad. We truly hope this was just an off night, because it did not feel like the Star Noodle we have loved for so long.

Went for takeout after seeing/hearing about this place all over social media and from friends on the island. Every dish we ordered had dry, chewy meat (ribs and pork buns esp) and the garlic noodles had an off flavor. To top it off we ordered the mango mousse to go, and come home to find it melted into slop over the containers inside.. very odd packaging with no warning that it won’t hold for takeout. Servers were friendly and helpful while we were there but $100 for poor quality food was a huge let down after all the hype. Won’t be recommending or returning.

We had such an amazing time here that we went back a few nights later. The Hot n Sour soup was pretty much life changing. Absolutely fantastic flavor, just enough heat not to be too dominate and very balanced. Beautiful open dining room with gorgeous views. The Old Fashioned was perfect.

We had a large party if 8 and liked that it was family style. The miso butter fish was our favorite. We ordered a ramen bowl but not the best for sharing. It was a little pricey and portions are small. Got great service!

This was my favorite dinner during our Maui trip! I made our reservations in advance so we could get a table right around sunset. Two of us shared the Garlic Noodles, Bacon & Eggs, Cantonese Green Beans, & Steamed Pork Buns and it was more than enough food for us (we are pretty light eaters). We also got the Malasadas to-go because we were so full but couldn’t skip dessert! Everything was delicious!! Service was friendly and efficient.

Ramen, garlic noodles, and boa buns are a must as well as there delicious Hawaiian-style drinks. The food is delicious and continues to be each time I go. We have been supporting this restaurant since its original location and love coming here on trips. Expensive, but worth it for the experience. The view is incredible and I would recommend coming during sunset for the full vibe. (MAKE RESERVATIONS) It is very difficult to make a walk-in around dinner and lunch so be prepared to wait if you do not have a reservation!

This place was very clean. The staff was friendly but our server didn't check on us very much. However the food was great and the view was nice. I had the pork belly with the fried egg and it was good. Its a bit pricey compared to portion size in my opinion, however its still good food and worth the visit. Overall I would recommend this place.

Star Noodle was so delicious! I’m so glad we were able to get a reservation. It was at 7:30 which stinks because it was dark and the best part about this place is the ocean view but the food made up for it! We had the pork steamed buns, two pots of noodles and the malasadas. The hot n sour soup was my absolute favorite and the malasadas was the perfect sweet end to dinner. Everything was so warm and cozy!

Really wanted to like this place but reviews are pretty spot on about it being overpriced and underwhelming. Food for two and one mocktail came out to about ~$150 after tax and tip but I guess thats normal for mediocre meal in Hawaii. I would not order the garlic noodles, crab and kombucha mandu or the ahi belly again. The Lahaina fried soup was the only thing we really liked. Barely any crab in the mandu, only taste the kombucha. At $18 for 3 measley pieces, a bit of a waste. Ahi belly was also tiny and overcooked. Couldn't tell if it was just any old regular piece of tuna. I've had better garlic noodles at any other vietnamese spot that included either steak or shrimp. These were lacking in flavor and didnt like the thin noodle. Service was great though. Go for the Lahaina fried soup. You can skip everything else we ordered.
